Jackfruit Dates Payasam


Preparation time: 30 minutes. Serving: 5

Today Sumathi made this payasam for "Vaikunda Ekadesi". She called me as soon as she tasted and experienced the fantastic taste of this new combination. This payasam is very rich in Iron mineral and can be substituted for any payasam during festival. Try this and let us know your feedback.

Ingredients: 
  • Milk - 1/2 litre
  • For garnishing: Elachi - 3 to 4, Broken cashew - 5 to 6, Ghee to roast
  • Jaggery - 300 grams (Size of a tennis ball if you get the "Pagu vellam")
  • Yellow moong dal - 1/2 cup (50 grams)
  • Gram dal - 1 table spoon
  • Raw rice - 1 tsp
  • Dates - 100 grams
  • Jack fruit - 200 grams ( 8 to 10 nos)

Method:  
  • In a hot pan without oil roast moong dal, gram dal and rice
  • Grind this in a mixer to coarse powder after cooling.
  • Pressure cook this mixture or boil it in vessel.
  • Now make the "Pagu" with Jaggery. There 2 ways to check the right consistency of the "Pagu"
    • Break the jaggery into small pieces
    • Add very little water (1/4 cup of water)
    • Allow it to boil
    • After 8 to 10 minutes, take a drop of pagu and put it in cold water. Try to make a small ball. If it dissolves, then the "Pagu" is not ready. If you are able to make a ball, your Pagu consistency is fine.
    • 2nd way is, take a little pagu in a spoon. Allow it to cool for a minute. Now see if you can  make a thin string. If you are able to make it, then your pagu is fine. Single string is good enough for this Payasam.
  • Now clean the dates and jack fruit. Remove the seeds and strings around. Wash them well.
  • Pressure cook both the fruits.
  • Allow it to cool and add these pulp to the "Pagu".
  • Now add the dal mixture
  • Just add the 1/2 litre of packet milk directly into this mixture. Milk need not be boiled.
  • Add the roasted cashew nuts and elachi.
  • When it foams out, remove from fire.
  • Very tastier and rich in Iron mineral sweet is ready in 30 minutes. This can be prepared for any function or festival as different payasam.

After a heavy food on previous day, we will have very lighter menu next day. Without compromising on the nutritious value,  I made this green thuvaiyal along with Jeera rasam for our lunch today.

Ingredients: 

  • Half bunch of mint leaves
  • 2 table spoon of coriander leaves chopped
  • A handful of curry leaves
  • 1/2 tsp flax seeds
  • 1/2 tsp Jeera
  • 2 nos of gren chillies
  • 1 tsp coriander seeds
  • Mustard seeds and urad dal for seasoning
  • 2 almonds
  • 1/2 tsp of gram dal
Method: 
  • Finely roast gram dal, almonds, Jeera and coriander seeds separately (dry)
  • Keep this aside
  • Now add all the greens in a hot pan and add till water
  • Boil it for 3 minutes or microwave the greens for 3 minutes
  • Allow all the ingredients to cool
  • Now in a small mixer container, add all the ingredients along with flax seeds and salt
  • Coarsely grind
  • Season with mustard seeds and urad dal

This is one of the easiest recipe to make anytime quick. Mint raitha took me about 10 minutes to prepare and we used it for our Mooli chapati for dinner. It's tastier, not heavier at all and requires very less oil.
Ingredients: 
  • Curd or Yogurt - 1 cup
  • Mint leaves - 1 small bunch
  • Coriander leaves - 1 table spoon chopped
  • Gram dal - 1 table spoon
  • Jeera - 1/4 tea spoon
  • Flax seeds - 1 tea spoon (pounded)
  • Salt to taste
Method:  
  • Microwave coriander leaves and mint leaves for 5 minutes by adding little water
  • Roast gram dal into golden brown by adding a drop of oil
  • Now add all the content in a mixi jar and blend it for 30 seconds
  • Season with mustard seeds if you like (optional).
  • Mint raitha is ready to serve now

Dahi Aloo




Source of this recipe Read this recipe in a magazine and tried yesterday evening for the dinner. We really enjoyed this new dish along with mint chapati. It just took 10 minutes to prepare as I had boiled potato's in the fridge.

Ingredients
  • Boiled potatoes - 2 nos
  • Curd or Yogurt - 2 cups
  • Jeera - 1 tsp
  • Grated ginger - 1 small piece
  • Green chillies - 3 nos
  • Flax seeds - 1/2 tsp
  • Capsicum grated - 1 tbsp
  • Mustard seeds for seasoning
  • Oil - 1 tbsp
  • Grated onion - 1 no
Method to prepare
  • In a hot pan, add oil and mustard seeds
  • After it splutters, add onion and fry till it becomes golden brown
  • Now add the slitted green chillies, ginger, capsicum, and little bit of turmeric powder
  • Saute for 2 to 3 minutes
  • Now add jeera powder and flax seeds
  • Add the mashed potatoes and salt
  • Blend the curd and add at the end
  • Boil for couple of minutes until potatoes get marinated in curd. (3 minutes)
  • Garnish with chopped coriander leaves and serve hot along with any chapati

  • I am planning to try this like "paruppu urandai more kuzhambu"
